Start with flour, brown sugar with white sugar, salt, instant dried yeast, now cinnamon with all spice, bring those together nicely.
Add one egg, melted butter, and water.
Mix the dry ingredients, then add the wet ingredients. It's gonna get wet, it's gonna get sticky.
Add the chocolate chips and knead the dough for about 10 minutes.
Cover the dough and let it rise for 1 hour.
Punch down the dough, divide it into 12 pieces, and roll them into balls.
Place the dough balls into a baking tray lined with parchment paper, then cover them.
Let the dough rise for 45 minutes.
Make a piping bag with a mixture of water and flour, and pipe crosses onto the buns.
Bake the buns at 180°C/360°F for 25 minutes.
Make a sugar glaze by mixing powdered sugar and boiling water, and brush it onto the baked buns.
