Preheat the oven to 400 degrees.
Add the tamari, olive oil, and tofu cubes to a container and shake until coated.
Add the furikake and cornstarch and shake again.
Spread out on a parchment lined baking sheet and bake for 20 minutes.
Make the sauce by whisking together all the ingredients or shaking in a jar.
One the tofu is cooked assemble the boats by adding rice and tofu to the lettuce leaves.
Top with scallions and the bang bang sauce.
