Katsu Chicken
  1. In a medium bowl combine the panko breadcrumbs and seasonings under the chicken heading.

  2. In another medium bowl combine the mayonnaise and chicken together. Roll each piece of chicken in the breadcrumb mixture and place on a plate and refrigerate.

  3. In a small bowl combine all the sauce ingredients together – set aside.

  4. Preheat oven to 180°C (160°C fan bake).

  5. In an ovenproof fry pan heat the oil over a medium/high heat.

  6. Pan fry the chicken for about 3 minutes each side or until golden brown.

  7. Place the pan in the oven for 8 minutes.

  8. Leave the chicken to rest before carving.

  9. To serve, place some rice at the bottom of a bowl, top with salad ingredients and some sliced chicken. Drizzle over some katsu sauce.
