Start by prepping the peppers, onion and garlic.
Drizzle some olive oil in a deep frying pan and heat over a medium flame.
Add the sausages to the pan and cook on each side for about 5 minutes.
Remove sausages from the frying pan and set aside.
Drizzle more olive oil to the same frying pan and add the onions and garlic. Cook over a low flame until golden brown.
Add the peppers to the frying pan and mix together. Add salt, black pepper, and oregano. Cook for 9 minutes, stirring occasionally.
Add the sausage back to the pan and cook over a medium/low flame for 10-15 minutes, stirring occasionally.
Serve with a side of potatoes or rice, or as a sandwich. Enjoy!
