Mini Vegan Keto Banana Chocolate Chip Bread
  1. Preheat oven to 350°F (175°C). Lightly grease or line a mini loaf pan or 2 muffin cups.

  2. Soften the banana: Soak the dehydrated mini banana in 1 tbsp warm water for 5-10 minutes. Mash well.

  3. In a small bowl, combine the mashed banana, maple syrup, melted coconut oil, vanilla extract, and either flaxseed or Just Egg.

  4. Stir in almond flour, salt, and baking soda until a thick batter forms.

  5. Fold in chocolate chips.

  6. Spoon batter into your prepared pan or muffin cups.

  7. Bake for 25-30 minutes, until golden and a toothpick inserted comes out mostly clean.

  8. Cool slightly before enjoying.
