Prepare the spaghetti squash
Cut chicken thighs or breast into bite sized pieces
Season chicken with onion powder, garlic powder, dried parsley, dried oregano, salt, and pepper
Cook seasoned chicken in olive oil until done
Add thin sliced shallot and minced garlic cloves to the pan
Deglaze the pan with chicken stock or white wine
Add baby spinach to the pan and cook until wilted
Stir in Parmesan cheese and cottage cheese
Combine the chicken mixture with the cooked spaghetti squash
