Cut enoki mushrooms into 2cm width pieces and finely chop kimchi with scissors
Add enoki mushrooms, kimchi, and all ingredients A into a pot and bring to heat, stirring to combine. Once it starts simmering, reduce to medium heat and simmer for 5 minutes while stirring occasionally
After 5 minutes, turn off heat and add garlic chives (if using) and mix well. Transfer to a storage container, let cool to room temperature, then refrigerate thoroughly until chilled
