Saute your shrimp by adding olive oil to a pan to heat up. Add shrimp and top with salt and pepper. Cook until shrimp are fully cooked through.
Prepare jasmine rice accordingly. *I used a frozen rice to reheat!
Make your spicy mayo by combining mayo, sriracha, honey, lemon and sea salt in a small bowl. Mix together to combine. Set aside.
In a bowl, add jasmine rice, carrots, cucumber, pickled onions and sauteed shrimp.
Top with fresh herbs like cilantro and parsley.
Drizzle with spicy mayo sauce.
