Spinach Feta High-protein Egg Biscuits
  1. Preheat oven to 375°F and line a baking sheet with parchment paper

  2. Heat a skillet over medium high heat and add avocado oil, onions, garlic and spinach

  3. Cook until onions are softened and spinach has wilted, stirring occasionally

  4. Whisk eggs until smooth and season with salt and pepper

  5. Add cottage cheese and spinach mixture, almond flour, coconut flour and baking powder to eggs

  6. Stir until a thick batter forms and let sit for about 5 minutes

  7. Scoop batter onto the baking sheet using about ¼ cup per biscuit

  8. Top with a sprinkle of shredded feta cheese

  9. Bake for 18-25 minutes until golden and firm to the touch

  10. Store in the fridge for 4-5 days and reheat as desired
