Cranberry Orange Quick Bread
  1. Preheat the oven to 350°F and prepare a 9x5 loaf pan with baking spray.

  2. Combine the flour, sugar, baking powder, salt, and orange zest in a medium mixing bowl. Whisk to combine.

  3. Combine the buttermilk, oil, eggs, 1 tablespoon of the orange juice and vanilla in a large bowl. Whisk until well combined.

  4. Gradually add the dry ingredients to the wet ingredients and whisk until completely combined.

  5. Fold in 1 cup of the fresh cranberries.

  6. Pour the batter into the loaf pan. Sprinkle the remaining ½ cup of cranberries on top of the batter.

  7. Bake in the preheated oven for 60 minutes or until a toothpick inserted near the center comes out clean.

  8. Allow to cool completely. Serve and enjoy!
