Preheat your cooking method: oven to 350°F (175°C) or air fryer to 320°F (160°C). Prepare your mini muffin tin or air fryer basket.
In a medium mixing bowl, combine the cottage cheese, eggs, vanilla extract, and sweetener. Whisk until smooth.
Add almond flour, baking powder, and salt to the wet ingredients. Stir gently until just combined.
Gently fold in the blueberries, reserving a few for topping. Divide the batter into prepared cups and top with reserved blueberries.
Bake for 18–22 minutes in the oven or air fry for 12–15 minutes until golden brown and firm to the touch.
Allow to cool for 5 minutes before serving.
