Cottage Cheese Protein Pancakes
  1. In a large bowl whisk together the cottage cheese, eggs, milk, vanilla extract, maple syrup and melted butter until smooth

  2. In a separate bowl mix the flour, baking powder, baking soda, salt and the whey protein

  3. Gently fold the dry ingredients into the wet mix. A few lumps are fine

  4. Carefully fold in the blueberries

  5. Let the batter rest for 5 to 10 minutes

  6. Heat a pan over medium-low heat with a little butter

  7. Pour roughly a quarter of the mix per pancake

  8. Cook until bubbles form and the edges set, then flip and cook for another 1 to 2 minutes

  9. Stack them up, add butter, drizzle maple syrup and enjoy
