In a large bowl whisk together the cottage cheese, eggs, milk, vanilla extract, maple syrup and melted butter until smooth
In a separate bowl mix the flour, baking powder, baking soda, salt and the whey protein
Gently fold the dry ingredients into the wet mix. A few lumps are fine
Carefully fold in the blueberries
Let the batter rest for 5 to 10 minutes
Heat a pan over medium-low heat with a little butter
Pour roughly a quarter of the mix per pancake
Cook until bubbles form and the edges set, then flip and cook for another 1 to 2 minutes
Stack them up, add butter, drizzle maple syrup and enjoy
