Melt 30g butter, until lightly bubbling.
Slowly whisk in 30g plain white flour until you have a smooth paste.
Do this over a low heat for 1-2 mins to cook off the flour and avoid a grainy taste.
Slowly whisk in 300ml of water (or chicken stock) bit by bit until you have a smooth sauce.
You should be doing this over the span of at least a minute of whisking.
Bring it to a low simmer.
Reduce your lowest heat and Slowly whisk in 200-250ml of double cream stirring until completely incorporated.
Should be smooth.
Mix in 1tsp paprika, 0.5tsp garlic powder, 0.5tsp onion powder, 0.5tsp pepper and pinch of salt then add 5 slices of American cheese.
Mix continuously until completely melted and smooth again.
Should not have clumps - do this on a low heat.
Slowly mix in 250g Red Leicester cheese, small handfuls at a time, not moving to next handful until completely melted and smooth.
Will take a couple of mins.
Mix in 1tbsp of pickle juice, and adjust salt and pepper to taste.
Serve on fries / nachos / bread / pasta / whatever you want cheese sauce with!!!
