Finely mince 3 cloves of garlic, finely dice ½ of an onion, reserve 2 cups of fresh spinach and crack 3 eggs into a bowl, season with sea salt & black pepper and whisk together until well combined
Heat a nonstick fry pan with a medium heat and add in 2 tablespoons of extra virgin olive oil, after 2 minutes add in the diced onions and minced garlics, mix with the olive oil, after 3 minutes add in the 2 cups of fresh spinach and continue to mix, once the spinach has welted (about 2 minutes), season everything with a kiss of sea salt and some freshly cracked black pepper, quickly mix together and then pour in the egg mixture, after 1 minute run a spatula through the outer edges, to ensure the omelette is not sticking, after 2 minutes add in a slice of cheese and fold the omelette together, cook for 30 seconds and then flip the omelette, cook for another 30 seconds, transfer to a serving dish next to some sliced tomatoes, enjoy!
