Heat your slow cooker and add the pork, season with salt & pepper. If you don't have a sear setting you can do this in a pan first.
In a bowl, mix together all the BBQ sauce, ingredients into a smooth paste.
Brush the paste over all the meat and cook on high for 1.5-2 hours or on low for 4 hours, all machines vary but once the pork is easy to shred with a fork or whisk.
Add into serving dish and add some more smoked paprika and fresh parsley.
To make into quesadillas, spoon the mixture into half of a round tortilla, add cheese and any other topping on top (make kids like them plain enough).
Fold over the tortilla and toast in a hot pan with a tiny bit of oil.
When crispy on both sides, cut into triangles and served your fave dips, enjoy!
