Preheat oven to 350 and line an 8x8 pan with parchment. Whisk together almond flour, tapioca, baking soda and salt in large bowl
In a separate bowl whisk together melted butter and sugar until pale, add egg and vanilla and almond extract if using.
Combine wet and dry ingredients and add chopped Oreos. Bake for 15 minutes or until just starting to brown
Meanwhile make the frosting by creaming together cream cheese, butter and vanilla then add powdered sugar and salt.
Top cooled cookie base with frosting, add crushed Oreos and enjoy!
