Start by brining the chicken wings in a mixture of pickle juice and soy sauce. Let them marinate in the refrigerator for about an hour.
For the chipotle lime sauce, blend together a can of chipotle peppers in adobo, water, brown sugar, 1 teaspoon each of garlic and onion powder, mayo, and the juice from one lime.
Prepare a spice mix using cayenne, cumin, chili powder, paprika, salt, pepper, garlic powder, onion powder, and a bit of cornstarch to season the wings.
Arrange the wings in a single layer on an elevated rack placed on a parchment-lined baking tray. This helps them cook evenly and stay juicy while crisping up nicely.
Bake the wings in the oven at 275°F for 40 minutes on the elevated rack.
After baking, fry the wings on both sides until they are crispy.
Once the wings are out of the oil, season them with salt and pepper, then toss them in the chipotle lime sauce along with an extra squeeze of lime juice.
Garnish the wings with chopped cilantro, tomatoes, onion, crispy garlic, a lime wedge, and a sprinkle of Tajin.
