Add 6 thinly sliced Persian cucumbers and 2 cups chopped or shredded chicken breast to a large bowl
Finely dice ½ red onion and soak in water for about 5 minutes to remove excess pungent smell, then finely chop a large handful of fresh parsley
Add the soaked onion and chopped parsley to the bowl with the cucumbers and chicken
Make the dressing by mixing together ½ cup Greek yogurt, 2-3 tbsp mayo, zest of 1 lemon, juice of 1.5 to 2 lemons, 1 tbsp Dijon mustard, ½ tbsp olive oil, and salt and pepper to taste
Taste the dressing and adjust to your liking with more lemon juice, salt, or yogurt
Pour the dressing over the bowl and toss really well so everything is evenly coated
Finish with 3-4 tbsp chopped pistachios for crunch and serve
