Press the water out of your tofu and grate on the cheddar/coarse side.
Transfer the grated tofu to a bowl with the spices, cornflour, salt and pepper. Coat well, then spread out evenly on a baking sheet, drizzle with oil and bake at 200C for 10 minutes.
While the tofu is baking, make the pickled cabbage by combining all ingredients in a bowl, tossing well until the cabbage and onion begin to turn a brighter pink. Set aside to continue pickling until ready to serve.
1 minute before the tofu is done, mix together the ingredients for the BBQ sauce. Remove the tofu from the oven, pour over the sauce and coat everything well.
Assemble your tacos by dry frying the tortillas if desired, then piling up starting with smashed avocado, then tofu and pickled cabbage. Squeeze over a little extra coriander and lime juice if desired, and enjoy!
