Melt butter in a pan and cook garlic for 1-2 minutes.
Slowly whisk in flour, then chicken broth, to prevent lumps.
Continue stirring.
Add in cottage cheese, heavy cream, salt, and pepper.
Let the mixture thicken and cook for 5-10 minutes on medium heat.
Stir in freshly grated Parmesan cheese.
Toss in your noodles, leaving some of the noodle water to help bind the sauce and thicken it.
Enjoy, garnished with fresh parsley. Add chicken or meat of choice.
