Cook chicken in the air fryer or oven until crispy.
In a bowl, combine ketchup, water, rice vinegar, soy sauce, sugar, garlic cloves, and cornstarch.
Cook the sauce over medium heat, mixing well, for about a minute and a half until it thickens.
Add the cooked chicken to the sauce and toss to coat.
Serve over leftover rice.
Top with green onion and sesame seeds (optional).
