Tortilla Crusted Shrimp Po-boy Tacos
  1. Prepare your remoulade by mixing the remoulade ingredients together. Set aside.

  2. In a small bowl, mix together the seasoning ingredients.

  3. In 3 separate mixing bowls, prepare your steps for frying; in bowl #1, mix together the ⅓ cup of flour and half of the seasoning. In bowl #2, whisk together the egg, buttermilk and hot sauce. In bowl #3, mix the other half of the seasoning with the crushed tortilla chips and cornmeal.

  4. Season the shrimp with ½ tsp kosher salt. Then toss your shrimp in the #1 bowl of flour.

  5. Then, dip the floured shrimp in the #2 bowl of the buttermilk mixture..

  6. Finally, toss the shrimp in the crushed tortilla chip mix.

  7. Repeat with all the shrimp.

  8. In a heavy bottomed skillet, heat up the vegetable on medium heat.

  9. Once your oil is ready to fry, gently place the shrimp in the oil without overcrowding. Flip after 1-2 minutes with tongs.

  10. Place the fried shrimp onto a plate lined with a paper towel to drain excess oil.

  11. Assemble your tacos and enjoy!
