Greek Pasta Salad (Tofu)
  1. Press tofu for 15 mins to remove water and squeeze

  2. Break tofu with large hole box grater

  3. Marinate tofu in Italian dressing with garlic for 10 mins

  4. Bake tofu at 400°F for 20 min, until light brown

  5. Rinse chick peas and sauté in oil with minced garlic, powder and Italian seasoning with spinach

  6. Cool pasta to room temp

  7. Assemble all ingredients
