Easy, Healthy Chicken Corn Salad
  1. Cook corn with butter, salt, and chili powder

  2. Dice cucumber, red onion, and jalapeños

  3. Cook and cube or shred chicken breast

  4. Chop cilantro

  5. Mix fat free greek yogurt, light mayo, lime juice, minced garlic, salt, and chili powder to make the chili lime sauce

  6. Combine corn, cucumber, red onion, jalapeños, chicken, and cilantro in a bowl

  7. Pour chili lime sauce over the salad and mix well

  8. Optional: top with tajin and cotija cheese for street corn flavor
