Croque Madame
  1. To make the béchamel sauce melt 3 tbsp butter in a saucepan.

  2. Stir in the flour and cook for 1 minute.

  3. Gradually whisk in the milk until smooth and thickened.

  4. Season with salt, pepper, and nutmeg. Set aside.

  5. Start to assemble the sandwiches. Spread béchamel on 6 slices of bread.

  6. Add ham and half the cheese.

  7. Top with the remaining bread slices.

  8. Spread a little béchamel on top and sprinkle with the rest of the cheese.

  9. Pre-heat the grill.

  10. Melt 2 tbsp butter in a frying pan.

  11. Place the sandwiches in batches in the frying pan and fry until golden on both sides.

  12. Transfer to a baking tray and grill for 3–5 minutes until the cheese topping bubbles.

  13. Fry 6 eggs sunny-side up in a separate pan.

  14. Place one fried egg on each sandwich.

  15. Serve hot with a fresh salad or crispy potatoes
