Peel the potatoes and place them in a bowl of water for 15 minutes
Grate the potatoes and squeeze out as much water as possible
Place the grated potatoes back in a bowl with 2 eggs, cornflour, salt, onion powder, garlic powder, smoked paprika, and black pepper
Add the low fat cheese and mix everything together
Lightly spray a tray with baking paper with cooking oil spray
Using your hands, form 8 even hash browns
Place them in the freezer for about an hour to let them firm up
Add a bit more cooking spray to the hash browns
Air fry or bake according to your preference until crispy on the outside and fluffy on the inside
