Preheat the oven to 375 degrees and spray a 9x5 loaf pan with nonstick spray.
In a sauté pan add the olive oil, diced onion and diced pepper.
Sauté until the onions are translucent.
In a bowl add all the ingredients and mix until incorporated.
Add to the loaf pan and bake for 45-55 minutes.
Internal temp should be 160.
Remove, add some of the glaze, bake for 5 minutes and enjoy!
Add all of the ingredients to a stock pot and cook for 10 minutes.
Serve with the meatloaf.
