Preheat oven to 190°C (375°F). Line a baking sheet or lightly grease a loaf pan.
In a large bowl, mix chicken, parmesan, breadcrumbs, eggs, garlic, milk, herbs, and seasonings. Don't overmix—just until combined.
Shape into a loaf and place on baking sheet or in pan. Top with extra cheese if using.
Bake for 45–55 minutes, until golden and cooked through (74°C / 165°F inside).
Let rest for 5–10 minutes before slicing. Serve with a sprinkle of parsley.
