Melt butter in skillet and sauté garlic with tomato paste until fragrant.
Whisk in cream until tomato paste dissolves, add broth and thyme, simmer 10–15 minutes until thickened.
Stir in drained diced tomatoes.
Nestle cooked chicken into sauce, spooning sauce over top.
Garnish with fresh herbs and serve with rice, pasta, or potatoes.
