Ingredients:
In a large bowl, combine ground chicken, feta cheese, sun-dried tomatoes, parsley, oregano, garlic, red onion, egg, breadcrumbs, lemon zest, salt, and pepper. Mix well until all ingredients are evenly incorporated.
Form the mixture into 6-8 small patties, pressing gently to shape them.
Heat olive oil in a skillet over medium heat.
Cook the patties for about 4–5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
Serve warm with a side of tzatziki, salad, or wrapped in pita bread.
