Preheat the oven to 350°F (175°C). Lightly grease two small oven-safe bowls or ramekins.
Add cottage cheese, egg, oats (or almond flour), cinnamon, maple syrup, and salt to a blender. Blend until completely smooth.
Gently fold in the chopped apple, saving a few pieces for the top if you like.
Evenly divide the mixture between the prepared bowls. Scatter the reserved apple pieces on top and bake for 25–30 minutes, until set and lightly golden.
Serve warm and finish with chopped nuts, a sprinkle of cinnamon, or a drizzle of nut butter.
