Healthy Apple Muffins
  1. Preheat oven to 180°c

  2. Prepare a 12 cup muffin tin, grease it or line with paper cups

  3. Grate the apple and carrot, Soak the rolled oats, grated apple, carrot and vanilla in the milk. This is best done for at least 20 minutes or overnight.

  4. Place the dry ingredients; flour, baking powder, cinnamon and brown sugar in a large mixing bowl and mix.

  5. Add the apple sauce(or 1 egg) and oil to the soaked oats and mix well.

  6. Add the wet ingredients to the dry ingredients and gently combine until just mixed.

  7. Portion batter into the muffin tray.

  8. Bake for 28-35 minutes. The muffins will be golden when cooked and will bounce back when gently pressed in the centre. Allow to cool in the tray for 5 minutes before removing.

Note: apple/carrot may produce excessive juice, adjust the flour accordingly, add a tablespoon at a time.
