Claire’s Potato Soup
  1. Combine the first 9 ingredients in a big pot and bring to a boil.

  2. Cover and reduce heat.

  3. simmer for 7 to 8 minutes or until done.

  4. Stir in 2.5 cups milk

  5. Add the rest of the milk if needed and the cheese

  6. cook over medium heat until warm.

  7. I use and emulsion blender to make smooth.
