Baked Parmesan Panko Zucchini Fries With Comeback Sauce
  1. Preheat the oven to 450F and line a large baking sheet with parchment.

  2. Drizzle the parchment with olive oil

  3. Cut the zucchini into large French fry shapes.

  4. Add the beaten eggs to a shallow dish (I actually use a loaf Pan).

  5. In another shallow dish combine the panko, Parmesan, Italian seasoning, salt, pepper, garlic powder and cayenne.

  6. Dip the ‘fries’ into the egg and then the Panko.

  7. Lay flat on parchment leaving equal space between each piece.

  8. Drizzle each with olive oil.

  9. Bake for 18-20 minutes or until golden and crispy.

  10. Add all comeback sauce ingredients to a bowl and whisk to combine.
