Smashed Potato Salad
  1. Par boil the potatoes for eight minutes, then drain and leave to steam for five minutes

  2. Pop the potatoes into a bowl, then sprinkle in the spices and mix well

  3. Add potatoes into a baking tray along with hot oil

  4. Pre-heat oven to 200°C / 180°C fan and scatter the potatoes into the tray

  5. Turn potatoes to coat generously in the oil

  6. Cook in the oven for 30 minutes turning occasionally

  7. Crush potatoes with a glass then return to the oven for another 30 minutes until crisp

  8. In a separate bowl, combine the mayonnaise, mustard, cucumber, onion, herbs and chilli

  9. Gently fold the crispy potatoes through the mixture

  10. Serve in a bowl and crumble feta cheese over the top
