Crispy Potato Pie With Meat And Mushroom Filling
  1. Cut potatoes in half and place in a baking dish

  2. Coat with olive oil and season with salt & garlic powder

  3. Arrange cut-side down and bake at 400°F / 200°C for 40-45 minutes

  4. Slice mushrooms and sauté until golden brown, season with salt & pepper

  5. Dice onion and sauté until soft and golden

  6. Add ground pork & beef mix and cook until browned

  7. Add minced garlic and cook for a minute

  8. Stir in tomato paste, smoked paprika, cayenne pepper, and dried thyme

  9. Add hot water, soy sauce, balsamic vinegar, and sugar

  10. Simmer for 5-7 minutes until sauce thickens

  11. Smash baked potatoes flat using a glass bottom

  12. Brush potato base with melted butter and Parmesan mixture

  13. Bake for 15-20 minutes until crisp

  14. Spread meat filling evenly over potato base

  15. Add sautéed mushrooms on top

  16. Sprinkle shredded Cheddar and Mozzarella cheese

  17. Add oregano if desired

  18. Bake for another 10-15 minutes until cheese melts

  19. For slaw: combine thinly sliced cabbage, shredded carrot, sliced onion, and chopped apple

  20. Whisk together rice vinegar, olive oil, honey, and Dijon mustard

  21. Toss slaw with dressing and let rest for 10-15 minutes

  22. Toast seeds and nuts for topping

  23. Cool potato pie for a few minutes before removing from pan

  24. Serve with fresh slaw and toasted seeds and nuts
