Preheat oven to 180c and line a baking tray with baking paper
Add your sausage meat, grated apple, carrot and courgette to a bowl and mix well until combined
Spread your mixture in a line along one side of your puff pastry leaving around 1cm from the edge
Fold your pastry over and seal with a fork before cutting into mini rolls and brushing with a beaten egg or milk on your baking tray
Bake for 20-22 minutes until cooked through and golden in colour
