Thai Chicken Meatballs In Coconut Curry
  1. In a large bowl, combine ground chicken, panko, egg, garlic, ginger, green onions, cilantro, soy sauce, salt, and black pepper. Mix just until combined. Roll into 12–16 meatballs.

  2. Heat 1 tbsp oil in a large skillet over medium heat. Cook the meatballs for 6–8 minutes, turning often, until browned on most sides. They do not need to be fully cooked yet. Transfer to a plate.

  3. In the same skillet, heat 1 tbsp oil over medium heat. Add curry paste and cook 30 seconds. Stir in garlic, ginger, and red bell pepper if using. Cook 1 minute.

  4. Pour in coconut milk and chicken broth. Stir in fish sauce, brown sugar, lime juice, and red pepper flakes if using. Bring to a gentle simmer.

  5. Return the meatballs to the skillet. Simmer gently for 8–10 minutes, until the meatballs are cooked through and the sauce thickens slightly. Stir in spinach if using and let it wilt.

  6. Spoon the curry and meatballs over jasmine rice. Garnish with extra herbs and lime wedges.
