Add water and sugar to a pan and heat until melted and simmering, stirring frequently.
Add the citric acid and stir well.
Leave to simmer for approximately 45 minutes to 1 hour.
The temperature should reach 240-250f or 115-120c.
Test on a cold saucer and if it's a bit thick, add 30ml boiling water and stir.
Decant to a clean jar, let it cool, then label up and use for drizzling and baking.
