Mexican Taco Skillet (30 Min)
  1. Heat the oil in a large cast iron skillet over medium-high heat. Add the ground beef and cook 8-10 minutes, breaking apart the beef with a spatula or spoon, until browned.

  2. Add the taco seasoning and water. Cook for 2-3 minutes, until the extra water is absorbed.

  3. Reduce the heat to medium. Add the onions and bell peppers. Cook for 10-15 minutes, until onions are soft and translucent.

  4. Add the diced tomatoes and mix in. Simmer for 2-3 minutes, stirring occasionally with tongs, until ny extra moisture evaporates. Season with salt and pepper to your taste, if needed.

  5. Reduce the heat to low. Sprinkle shredded cheese on top. Cover with a lid and heat for 1-2 minutes, just until the cheese melts.

  6. Remove from heat and sprinkle with green onions. If desired, serve with a dollop of sour cream.
