In a soup pot on medium heat, sauté diced onion, carrots, and celery in olive oil for 5-10 minutes
Add in beans, spices (pepper, salt, dill, and thyme), and veggie broth
Simmer for 25 minutes
Add in fresh spinach at the end and stir until wilted
Add in cooked rice or pasta (do not cook rice in the soup as it will soak up broth and become starchy)
