Fine Dining Carrots
  1. Peel the carrots and cut them in half

  2. Cut the halves in half again

  3. Mix together olive oil, salt, black pepper, chili powder, paprika, adobo, chopped parsley, and grated garlic in a bowl

  4. Grate parmigiano cheese and create a light layer at the bottom of a baking dish

  5. Toss the carrots in the marinade

  6. Place carrots flat side down in the parmesan, coating the flat side

  7. Arrange all carrots flat side down in the baking dish, keeping them close together

  8. Bake at 400 degrees for 18-20 minutes

  9. Remove from oven and transfer to a plate

  10. Garnish with chopped parsley for color and serve
