Moroccan Pasta Shorba
  1. Heat the olive oil in a pot over medium heat. Add the garlic and sauté until lightly golden.

  2. Stir in the tomato paste and cook for about 1 minute to deepen the flavor.

  3. Add the diced tomatoes and cook for 3–5 minutes until softened.

  4. Season with paprika, cayenne pepper, salt, and black pepper.

  5. Pour in the water and bring to a boil.

  6. Add the pasta and cook for about 10–12 minutes, stirring occasionally, until the pasta is tender.

  7. Taste and adjust seasoning if needed. Garnish with fresh parsley if you like.
