Preheat the oven to 325* and lightly spray a 9x13 baking dish with non stick spray or Parchment Paper.
Season the Chicken with Salt and Pepper.
Cut the chicken into 1 inch pieces.
Place 1 cup Cornstarch in a ziploc bag and add the chicken pieces to the bag and shake.
In a shallow dish beat the eggs.
Heat the Oil in a skillet.
Dip each of the Chicken pieces into the egg mix and then place into the skillet.
Sear the chicken to seal in the juices.
Once the chicken is seared place it on the prepared pan.
In a medium bowl combine the sugar, ketchup, vinegar, garlic powder, Soy Sauce and salt.
Pour this mix over the chicken pieces and bake for 1 hour, turning the chicken to the other side once midway through.
Serve with Rice or your choice of sides.
