Broccoli Cheddar Chicken Orzo
  1. Cut two chicken breasts into cubes.

  2. Add salt, pepper, garlic powder, and paprika to the chicken and mix.

  3. Add oil to a pan on medium heat.

  4. Cook chicken for about 10 minutes total until cooked through.

  5. Set chicken aside.

  6. To the same pan, add butter, 1 onion, 2 carrots, and 2 tablespoons of minced garlic.

  7. Cook vegetables for about 3 to 4 minutes.

  8. Toast 1 cup of orzo.

  9. Add about 2 ½ cups chicken broth.

  10. Let cook uncovered for about 5 minutes.

  11. Add one head of chopped broccoli.

  12. Let cook covered for another five minutes.

  13. Add chicken back to the pan to warm up.

  14. Add ¼ cup of milk.

  15. Add about 6 ounces of shredded cheddar cheese.

  16. Add ¼ cup of grated Parmesan.

  17. Let everything melt together.

  18. Add salt, pepper, and red pepper flakes to taste.
