One Pan Sticky Toffee Pudding
  1. Get your pan over a low heat, pour in your boiling water along with your dates and bicarbonate of soda and simmer for 3 minutes or so until jammy, then use a fork to mince further

  2. Add your butter and sugar and mix through until combined then turn off the heat

  3. Add your vanilla extract and eggs one by one whisking immediately to stop them scrambling

  4. Once combined, add your flour and mix through, but don’t over do it

  5. Turn the heat back on very low, put a lid on and leave it cook/steam for 40-45 minutes until it’s risen and the top has set

  6. Make your toffee sauce by pouring all of the ingredients into a cup and mixing

  7. Poke holes in your pudding and pour your toffee sauce all over it

  8. Serve up with some ice cream and a sprinkling of flaky sea salt and enjoy!
