  1. Line an 8x8 inch square baking dish with parchment paper.

  2. In the bowl of a food processor, combine the dates, cashews, tahini, and vanilla. Pulse until well combined and no large chunks remain, 3-5 minutes.

  3. Press the mixture into the prepared baking dish.

  4. Transfer to the freezer and freeze until firm, 30 minutes to 1 hour.

  5. Melt the chocolate in the microwave until melted and smooth. Let cool 10 minutes.

  6. Cut bars into 16 bars.

  7. Cover in chocolate and top as desired.

  8. Let the chocolate set up, about 10 minutes.

  9. Keep stored in the fridge.
