First blend the tomatoes in a blender.
Cook the onion in olive oil till starting to soften, add the ginger and garlic and cook for another minute.
Add in the spices with a splash of water and cook for another minute or so.
Add in the tomatoes, water, and chickpeas and simmer for 10 mins.
Stir in the coconut milk, lemon, and coriander and cook for another 5 minutes.
