Preheat oven to 450°F and add sheet pan to preheat
Mix clarified butter with olive oil and add a pinch of salt
Brush butter and oil mixture onto the preheated sheet pan
Arrange corn pieces on sheet pan with kernels side up
Add salsa macha, oregano, coriander, paprika and salt to remaining butter and oil
Bake corn at 450°F for 25-35 minutes until deeply golden, or broil for 2-3 minutes for light char
Brush spiced butter generously over corn and return to oven for another 10 minutes
Whisk together cream cheese, sour cream, mayo, lemon zest and juice until smooth
Remove corn from oven and top with parmigiano reggiano
Insert skewers into corn pieces
Let cool slightly, then drizzle with lemon crema
Top with chives, cilantro, and additional salsa macha
Serve with lemon or lime
