In a pot, add cherries, brown sugar, cinnamon, vanilla, and water. Cook on medium heat for 10 minutes.
Remove from heat, allow to slightly cool, and then add to a blender and blend until completely smooth.
Pour the mixture back into the pot and cook on medium-high for 5 minutes, until the mixture turns into a thick syrup consistency.
To make the iced latte, add ice to a glass, cherry pie syrup (to taste), whatever type of milk you enjoy, and 2 shots of espresso.
If you’d like to top it with cherry pie cold foam, froth heavy cream, a drizzle of vanilla bean paste, and cherry pie syrup in a cup until thick & frothy, then pour on top of the iced latte.
